Breakfast

I slept like a baby last night! God bless NyQuil. Our breakfast this morning was fresh yellow onion, red pepper, and asparagus cooked in extra virgin olive oil with canned organic (no salt added) tomatoes and two eggs, garlic, and fresh ground pepper. It was very tasty, but I should have added some of the portobello mushrooms I got yesterday. The only thing I find myself missing so far is cheese, some feta cheese on this breakfast would have been delish! Coffee with coconut milk is just going to take some getting used to. It’s not as sweet as I’d hoped. But we drink high quality coffee from a french press, so the coffee itself doesn’t taste bad, just a little bitter on my taste buds.

The next meal I’m cooking is a non-Paelo meal with just a little tweaking (we have company coming over). It will have bread, but none of the other additives that the recipe calls for. Hope it turns out!
