Ooooooh, I’m so excited about tonight’s dinner!! I’m going to start with a paleo version of deviled eggs (using sun-dried tomatoes and olive oil with the yolk & garnished with some smoked salmon), then it’s my own ginger chicken stir-fry (marinated chicken, tons of fresh ginger, broccoli, carrots, celery, & red onion cooked with sesame oil),  and for desert: baked apples stuffed with pecans, dried cranberries, shredded coconut and a bunch of yummy spices. Hungry yet?!? 🙂

Tomorrow’s dinner is comfort food: slow cooked beef & acorn squash stew.  Who said eating healthy was boring or plain?? Tonight we’ll be eating rice with the stir-fry (to finish up most of what we have in the house). And then…. the Burns’ house is going PALEO!  😛
